Well, here we are again. Another year has came and gone. Time seems to fly by anymore. Seems like yesterday I was loading up my mom’s car up to go to my Aunt Willie’s house for Christmas. I know I talk about her house a lot at the holidays, but that’s how it was back then. All the major holidays were spent there with family building memories that would stay with me for a lifetime. No matter how far we were or what was going on, we all tried to make it back there in time for Christmas. Many Christmas’s have came and gone since I have sat on the bar stool in the corner of that kitchen. All of us children have grown up and moved away to form our own Christmas traditions. Many of our family have past away taking many of our traditions with them.
This recipe is another one from my cousin Kay that she brought one year to Willie’s for Christmas.
Punch Bowl Cake
1 yellow cake mix, made to the package instructions and cooled completely
1 large box vanilla instant pudding
3 1/2 c. whole milk
1 large can crushed pineapple
2 cans cherry pie filling
1 large container cool whip, thawed
Chopped pecans, optional
Shredded coconut, optional
Mix pudding with milk and sit aside. Build your layers in a punch bowl or truffle bowl: 1/2 the cake, 1/2 the pudding, 1 can cherry pie filling, 1/2 the cool whip, and 1/2 the pecans. Repeat the layers. Top with cool whip and sprinkle with pecans and coconut. Store covered with plastic wrap in the refrigerator.
